I cook A LOT! So I never understood why I don't blog!

Going backwards!


So I always forget to take pictures,When I'm in the throw of things my camera is always somewhere else! But I remembered to take pictures of my Christmas contribution to dinner.( above)

My friend Celia is from England, and I always try and make something of the British persuasion when I visit her. Whether is be a Banoffee Pie, Spotted Dick, or Mincemeat Pie.
I wanted something different, so I made Mini, Mincemeat Pies.
It was daunting it used 3 things I have NEVER cooked with before: Phyllo dough, Puff Pastry, and Pre-made Mince Meat filling.
I was up for the challenge!
I wanted to make these the night before, but I consumed far too much wine and I passed out for the remainder of Christmas Eve, thankfully these are SO easy to make, I assembled them in about 20 minutes or so.

I began by rolling out the puff pastry and then spreading the mincemeat mixture on it, then rolling it up like a Swiss Roll. While I put it in the fridge to firm up, I started with the Phyllo dough laying it over a 12 cup cupcake tin I brushed it with butter, then layed another sheet over that and brushed it with butter. I then carefully pushed the dough into the tins. I grabbed my Swiss Mincemeat roll, then cut it up to 24 pieces and tucked them into the holes prepared for them, Finally brushed them with an egg wash. After 20mins in the oven, I had one of the most beautiful desserts I have ever made, and small enough so that people didn't feel guilty about eating one or two.
